Crisp fennel and sweet orange segments tossed with goat’s cheese and a drizzle of white chocolate olive oil.
Prep time: 10-12 minutes
Serves: 4 as a side dish
Ingredients:
4 ripe oranges
1 medium bulb fennel
100g soft goat’s cheese
2 tbsp Olivetta White Choc and Orange extra virgin olive oil
Black Pepper
Fresh Coriander
Directions:
Peel the oranges and cut into 5mm discs. Shave the fennel into thin slices using a mandolin or a very sharp knife. Wash and dry the baby coriander leaves or chop larger coriander leaves.
To assemble, arrange the orange slices on a large platter. Scatter the shaved fennel over the orange slices before crumbling the goat’s cheese on top. Drizzle generously with Olivetta White Chocolate and Orange extra virgin olive oil. Sprinkle with the baby coriander leaves and finish with a grinding of black pepper and salt if needed.
