A dirty martini crafted with fat-washed gin, delivering a velvety depth worthy of a certain MI6 agent’s soirées - smooth, sophisticated, and finished with a briny whisper.

Ingredients:
Fat-washed gin
250ml gin
30ml Olivetta Robust extra virgin olive oil
Dirty Martini
250ml fat washed gin
60ml vermouth
40ml Crawley’s dirty martini olive brine
Directions:
Prepare the fat-washed gin at least 24 hours before serving. Combine the gin and Olivetta Robust extra virgin olive oil in a freezer safe container. Cover and leave at room temperature for at least 4 hours to infuse. Transfer the container to the freezer and leave overnight. The next day, remove the mixture and strain it through a coffee filter or fine muslim to separate out the solidified olive oil. Store the clarified gin in a clean bottle in the fridge until ready to use.
To make the Dirty Gold Martini, combine the fat-washed gin, vermouth and olive brine in a mixing glass. Stir over ice until thoroughly chilled before straining into cold martini glasses. Garnish with an Olivetta Mixed Olive, or finish with a drop or two of Olivetta Robust extra virgin olive oil for extra richness.
