Provenance
This boutique estate oil is sourced from a single grove nestled in the hinterland of the Surf Coast, within Victoria’s Greater Geelong region. The climate here is among the most distinctive in Australia, shaped by five recognised sub-regions, a tapestry of microclimates, and dramatically varied soil types all exceptionally well suited to olive cultivation and the production of high-quality oils.
The grove itself is planted on fertile volcanic clay loam, prized for its depth and richness. Combined with a cool coastal climate and an above average annual rainfall, these conditions provide the ideal environment for the trees to thrive.
Tasting Notes
Terra Australis is a medium to robust extra virgin olive oil with initial aromas of fresh asparagus and green almond. This is followed with herbaceous notes reminiscent of rosemary for depth, with a lingering white pepper spice finish to complete the palate.
How To Use
A medium to robust extra virgin olive oil with balanced fruit and spice, ideal for both cooking and finishing. Its bold yet low-bitterness profile makes it perfect for roasting vegetables, sautéing aromatics, and enhancing salads, white fish, and chicken.
Use and Storage
Our oil is preserved in opaque packaging to protect it from light, which destroys the benefits contained within the oil. Best kept in a cool place away from heat. Consume before the Use By Date and within 3 months of opening the bottle.
